Grilled Spicy Aubergine Salad

Ingredients

medium aubergine, cut lengthwise 1/2″ thick

extra virgin olive oil + more for brushing

spicy pepper, minced

lemon, juice only

tbsp
red wine vinegar
Handful cherry tomatoes, cut in half

Greek yogurt

water
Instructions
Heat bbq on high heat.
Brush aubergine slices with oil and sprinkle with coriander, cayenne, cumin and salt. Grill for 10 min until tender.
In a medium bowl mix the spicy pepper, lemon juice, red wine vinegar, 1-2 tbsp oil, and a good pinch of salt until the vinaigrette is well combined.
Add tomatoes to the bowl and toss to combine.
In a small bowl, mix yogurt and water. The yogurt not only adds a nice taste but will help cut the heat from the cayenne!
On a serving dish, arrange the grilled aubergine and top it with the tomato mixture (make sure to pour all of that vinaigrette).
Drizzle with the yogurt mixture and garnish with basil Enjoy!
