Ingredients

  • Fresh Salmon (if frozen, fully thaw)
  • Extra virgin olive oil
  • Sesame oil (optional)
  • Tamari sauce (optional)
  • Handful of cherry tomatoes, cut in halves
  • Spicy , cut in slices
  • 1 tbsp fresh ginger, minced
  • 1/2 lemon juice
  • Fresh parsley, roughly chopped
  • salt

Instructions

  • Line a baking sheet with parchment paper and lay salmon on. If cooking a whole side of salmon, center it to the baking sheet. If using fillet cuts, then space them apart so they don’t touch each other.
  • Drizzle fish with olive oil, a few drops of sesame oil and salt to taste.
  • Add the spicy , ginger and the tomatoes
  • Sprinkle with parsley, squeeze the lemon juice over and finally drizzle with a little tamari sauce. If you only have soy sauce, that’s ok! I prefer tamari (the Japanese version of soy sauce) as it’s made with little to no wheat and is less salty!
  • In a cold  oven (do NOT preheat), pop the fish in and set the oven to 400 F for 25 min. When done, you will have PERFECTLY cooked salmon to enjoy!
