Pesto Sauce (Classic Basil Pesto)

- 3 loose cups basil
- 1/4 cup pine nuts
- 2 garlic cloves
- 1/3 cup grated Parmesan
- 2 tbsps grated Romano
- 1/2 cup EVOO
- salt to taste
In a food processor, toss the basil and pine nuts and run on high.
Stop the machine and add a few punches of salt, cheeses and garlic and run on high.
While the machine is still running, slowly add the EVOO.
Taste it for salt and enjoy!
