Pumpkin Spice Chocolate Chip Cookies

Soft and chewy pumpkin spice chocolate chip cookies made with pumpkin purée, warm spices, and melty chocolate chips — perfect for fall baking.

Ingredients
  

  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 stick unsalted buter, room temp
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/3 cup pumpkin purée
  • 1/2 cup chocolate chips
  • 1/2 tsp pumpkin spice mix

Pumpkin Spice Mix

  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground all-spice
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves

Instructions
 

  • Preheat oven to 350F
  • In a small bowl, mix the flour, baking powder and salt. Set aside.
  • In a stand mixer with the whisk attachment, cream the butter and brown sugar on medium low speed.
  • Add the egg, pumpkin purée, vanilla and pumpkin spice mix and mix until well combined and smooth. Make sure to strain the pumpkin purée in a fine-mesh strainer so that most of the water drips out!
  • Add the flour mixture slowly on low to medium-low speed until well blended.
  • Remove the bowl from the stand mixer and mix in the chocolate chips manually with a spatula.
  • On a lined baking sheet, use two spoons to scoop out the cookie dough and place on baking sheet leaving about 2” in between each cookie. Bake for 20-25 min and enjoy!
