feta, crumbled

lemon juice

Instructions
Preheat oven to 425F.
In a medium size frying pan, drizzle olive oil and stir-fry the garlic until golden.
Add the spinach, feta and lemon juice and stir until the spinach has reduced. Set aside.
On a cutting board, take the and gently pull back the skin using a paring knife without detaching it completely.
With a spoon, scoop the feta spinach mixture and stuff it between the drumstick and skin. Pull the skin back up and place on a lined baking sheet.
Drizzle drumsticks with olive oil, salt and pepper them to taste, and finish with a sprinkle of paprika.
Bake for 25 min, then flip and bake for another 15 min. Enjoy!
