Best Veggie Truffle Burger
Ingredients
- 1/2 cup uncooked quinoa
- 1/2 cup uncooked brown rice
- 6-7 mushrooms, minced
- 1 zucchini, grated
- 1/2 cup walnuts, chopped
- 1 garlic clove, minced
- 1 tsp salt
- 2 eggs
- 1 tbsp Totarella and Sons Truffle Sauce
- 2 tbsp EVOO
- 1 cup breadcrumbs
- 1 tsp dried thyme (optional)
- 1 tsp dried oregano (optional)
Instructions
- Preheat oven to 375 F and line a baking sheet with parchment paper.
- Cook both quinoa and rice in 2 separate pots according to directions.
- In a large bowl, mix the quinoa, rice, grated zucchini, minced mushrooms and chopped walnuts.
- Add eggs, EVOO, truffle sauce, breadcrumbs, salt, thyme and oregano. Mix well.
- Form 8 patties with the mixture and place on lined baking sheet and bake for 40 min. When complete, flip the patties and bake for another 15 min at 400 F. (You could also pan fry them if you like!)
- Slide them on a bun and dress ‘em up to your heart’s content! Enjoy!
