Pumpkin Spice Chocolate Chip Cookies

Pumpkin Spice Chocolate Chip Cookies
Ingredients
- 1 cup flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 stick unsalted buter, room temp
- 1 egg
- 1/2 tsp vanilla extract
- 1/3 cup pumpkin purée
- 1/2 cup chocolate chips
- 1/2 tsp pumpkin spice mix
Pumpkin Spice Mix
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground all-spice
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
Instructions
- Preheat oven to 350F
- In a small bowl, mix the flour, baking powder and salt. Set aside.
- In a stand mixer with the whisk attachment, cream the butter and brown sugar on medium low speed.
- Add the egg, pumpkin purée, vanilla and pumpkin spice mix and mix until well combined and smooth. Make sure to strain the pumpkin purée in a fine-mesh strainer so that most of the water drips out!
- Add the flour mixture slowly on low to medium-low speed until well blended.
- Remove the bowl from the stand mixer and mix in the chocolate chips manually with a spatula.
- On a lined baking sheet, use two spoons to scoop out the cookie dough and place on baking sheet leaving about 2” in between each cookie. Bake for 20-25 min and enjoy!
Notes
Can I use fresh pumpkin instead of canned pumpkin purée?
Yes, but it must be fully cooked, puréed, and strained to remove excess moisture. Canned pumpkin purée gives more consistent results.
How should I store pumpkin spice chocolate chip cookies?
Store them in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days.
