Classic Chimichurri

¡Carne con Chimichurri esta noche! Chimichurri tonight! What is chimichurri? It’s a fresh tangy Argentinian sauce that pairs superbly with grilled meats and vegetables. Here’s a classic version of chimichurri for you to enjoy!

Classic Chimichurri

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients
  

  • 1/2 cup extra virgin olive oil
  • 2 tbsp red wine vinegar (do NOT use white vinegar)
  • 1/2 cup parsley, finely chopped
  • 2 garlic cloves, minced
  • 1 red chili pepper, minced
  • 3/4 tsp oregano
  • 1 tsp salt
  • pepper to taste

Instructions
 

  • Mix all ingredients in a small bowl and let stand for 15-20 min before using so that all the flavours get released. Don’t use a food processor for this, do it all by hand with a sharp knife as this uncooked sauce should be textured and not a purée. Serve on grilled meats, vegetables, or as a marinade for chicken and pork chops!
