Carpaccio Pizza (Black Truffle Carpaccio)

Carpaccio pizza is a thin-crust pizza topped with delicate slices of carpaccio, often finished with truffle oil, cheese, and fresh ingredients after baking. This black truffle carpaccio pizza recipe combines homemade pizza dough with rich truffle flavors for an elegant Italian-style dish that’s perfect for entertaining or a special dinner at home.

What Is Carpaccio Pizza?

Carpaccio pizza is an Italian-inspired pizza made with a thin, crisp crust and topped with carpaccio — thinly sliced meat, fish, or truffle carpaccio — added after baking. The heat of the pizza gently warms the carpaccio without cooking it, preserving its delicate texture and flavor.

Black truffle carpaccio is especially popular on pizza, pairing well with mild cheeses, olive oil, and simple toppings that let the truffle aroma shine.

This type of pizza works especially well as an appetizer for wine-focused menus. For another truffle-based sauce, try this homemade truffle aioli.

How to Use Truffle Carpaccio on Pizza

  • Add truffle carpaccio after baking, never before
  • Pair with mild cheeses like mozzarella or burrata
  • Finish with olive oil or truffle oil sparingly
  • Keep toppings minimal to avoid overpowering the truffle

Prefer a more classic pizza? Not a problem. Instead, layer your pizza with tomato sauce, your favourite meat (sausage or cold cuts) or vegetables and sprinkle with cheese. The topping possibilities are endless. However, try not to overdo it with the toppings. The secret is to use fewer, yet high quality ingredients. In conclusion, you can’t go wrong with topping your pizza. Always use fresh ingredients that you love. Never put more than 3 toppings. Above all, have fun with it. Now, let’s get cooking.

  • 3 1/3 cups flour Tipo 00 or all-purpose flour
  • 2 tsp active dry yeast

  • 1 1/4 cups + 3 tbsp lukewarm water

Truffle Carpaccio White Pizza Topping

Pepperoni Red Pizza Topping

  • Pepperoni
  • Tomato Sauce
  • Ricotta

Instructions

  • Combine the flour, salt, and yeast in the bowl of your stand mixer with the hook attachment. Stir to combine.
  • Add the water, olive oil and honey. Continue to mix for about 5-10 minutes until dough is well blended.
  • Dough will be sticky. Transfer on floured surface and dust with a bit more flour. Knead the pizza dough by pushing with the base of your palm and folding it over, adding a bit of flour if still too sticky. Pizza dough should be nice and soft. Form into a ball.
  • Oil a large bowl and drop the pizza dough ball in, ensuring the dough gets covered in the oil. Cover with plastic wrap and let rise for 1 hr.
  • When dough has doubled in size, transfer to a floured surface and divide into 3 pieces. To stretch the dough, gently press it into a circle with your fingers, flipping it several times. Shape into 10-12” in diameter. Place pizza on either a pizza pan or pizza stone.
  • Preheat oven to 500F🔥. For the Black Truffle Carpaccio pizza, drizzle dough with a bit of olive oil, generously add mozzarella and layer on the truffle carpaccio. For pepperoni and ricotta pizza, spread on the tomato sauce, add mozzarella, layer the pepperoni and put dollops of ricotta on top.
  • Bake for 10-15 min until the cheese and crust are golden. The more toppings, the longer it may take. Enjoy! 😋🍕
