Grilled Spicy Aubergine Salad



Did you know that aubergine a.k.a. eggplant is considered a fruit? Well here’s another summer “fruit” salad for you to enjoy! Here’s my Grilled Spicy Aubergine Salad.

Grilled Spicy Aubergine Salad
Ingredients
- 2 medium aubergine, cut lengthwise 1/2″ thick
- 1-2 tbsp extra virgin olive oil + more for brushing
- 1 tsp coriander
- 1 tsp cayenne
- 1/4 tsp cumin
- 1/4 tsp salt
- 1 spicy pepper, minced
- 1/2 lemon, juice only
- 2 tbsp red wine vinegar
- Handful cherry tomatoes, cut in half
- 1/4 cup Greek yogurt
- 2 tbsp water
Instructions
- Heat bbq on high heat.
- Brush aubergine slices with oil and sprinkle with coriander, cayenne, cumin and salt. Grill for 10 min until tender.
- In a medium bowl mix the spicy pepper, lemon juice, red wine vinegar, 1-2 tbsp oil, and a good pinch of salt until the vinaigrette is well combined.
- Add tomatoes to the bowl and toss to combine.
- In a small bowl, mix yogurt and water. The yogurt not only adds a nice taste but will help cut the heat from the cayenne!
- On a serving dish, arrange the grilled aubergine and top it with the tomato mixture (make sure to pour all of that vinaigrette).
- Drizzle with the yogurt mixture and garnish with basil Enjoy!
