Honeydew Feta Salad

Honeydew Feta Salad
Ingredients
- 1/2 honeydew
- 3 mini cucumbers
- Handful of cherry tomatoes
- Half an onion
- 1/2 lemon juice
- Handful of walnuts
- Nice piece of Greek Feta
- Extra virgin olive oil
- Salt & Pepper to taste
- 1/2 tsp dried oregano (optional)
Instructions
- With a melon baller, scoop out little honeydew balls into a medium size bowl. If you don’t have a melon baller, simply cut in little bite size cubes.
- Cut the tomatoes in quarters and cut the cucumbers lengthwise in quarters and chop into little pieces. (We want every ingredient to roughly be the same size) Add to the bowl.
- Chop the onion into little pieces. Add them to the bowl.
- Cut and crumble the feta cheese and add to the bowl.
- Add the lemon juice, generously drizzle with olive oil and salt & pepper to taste. Mix well.
- Chop the walnuts, sprinkle all over salad and garnish with basil because we’re fancy. Enjoy!
Can I make honeydew feta salad ahead of time?
You can prep the ingredients a few hours ahead, but for best texture and flavor, assemble just before serving to keep the melon fresh.
What can I substitute for feta cheese?
Goat cheese or fresh mozzarella work well if you want a milder, creamier alternative to feta.
