Summer Mango Avocado Salad


My summer party staple dish! Here’s my mango avocado salad – a party favourite! Yep it’s a simple salad but it always gets everyone scraping the bowl and raving about how good it was! It’s also a pretty side to any bbq! Read below how to make my fresh and sweet Summer Mango Avocado Salad.

Summer Mango Avocado Salad
Ingredients
- 1 mango (or you can use cubed pineapple)
- 1 avocado
- 1/2 onion, chopped
- 1 spicy red pepper
- 1 tbsp extra virgin olive oil
- 1 tbsp rice vinegar
- Pinch of salt
- Basil and cilantro for garnish
Instructions
- Cut avocado in half using a sharp chef’s by slicing through the avocado lengthwise until you feel the knife hit the pit. Then rotate the avocado to make a cut all around the pit. Twist the two halves apart and remove the pit by carefully hitting the pit with the knife and twisting the pit out.
- Score the avocado flesh by making vertical and horizontal lines making sure to not pierce through the skin. The with a spoon scoop out the cubed flesh in a medium bowl.
- Place the mango on your cutting board with the tall side up. Starting slightly off-center on the top of the mango, take a sharp chef’s and slice all the way down as close to the seed as possible. Carefully repeat for other side. You should know have 2 halves of mango sans seed.
- Similar to the avocado, you want to score vertical and horizontal lines in the flesh of the mango, then pop the mango by pushing the skin inward and making the flesh fan out. With a spoon, scrape off the mango cubes you just made into the bowl
- Add the onions, olive oil, vinegar, salt and and mix well. Garnish with chopped basil and cilantro and enjoy as a BBQ side or on toast!
